*12  OBSERVED THE FOLLOWING IMPROPER HAND WASHING PRACTICE: ONE EMPLOYEE LEFT HIS COOKING STATION WITH HIS FOOD PREP GLOVES ON TO COMPLETE ANOTHER TASK AND RETURNED TO PREPPING FOOD WITHOUT WASHING HANDS AND CHANGING GLOVES. EMPLOYEES SHALL WASH HANDS AND CHANGE GLOVES AFTER THERE HAS BEEN AN INTERRUPTION IN THE FOOD PREPARATION PROCESS. 750.512 IMMEDIATE/ONSITE
*20  OBSERVED THE SANITIZER SOLUTION (IN THE BUCKETS) TO BE TOO WEAK AT THE FOLLOWING LOCATION(S): (1) AT SODA DISPENSING STATION (NEAR THE RESTROOM), AND (2) AT THE MAIN COOKING LINE. ALL SANITIZING SOLUTIONS WERE FOUND TO BE <50PPM (CHLORINE SOLUTION). PROVIDE FOR THE SANITIZER SOLUTION TO BE MIXED TO THE APPROPRIATE LEVEL FOR THE TYPE OF SANITIZER BEING USED--FOR A CHLORINE SOLUTION, THE SOLUTION SHALL BE 50PPM OF CHLORINE. 750.820 IMMEDIATE/ONSITE
*45  NO ONE HAS A FOOD SERVICE SANITATION MANAGER'S CERTIFICATE ISSUED BY THE ILLINOIS DEPARTMENT OF PUBLIC HEALTH. HOWEVER, ALL 3 SHIFTS ARE COVERED BY A FOOD PROTECTION MANAGER LICENSED BY SERVSAFE, AN ANSI APPROVED INSTITUTION. ILLINOIS HAS REPEALED THE LAW REQUIRING THE FOOD SERVICE SANITATION MANAGER'S CERTIFCATE, WHICH GOES INTO EFFECT IN 1/1/2018. STARTING 2018, HAVE ALL SHIFTS COVERED BY A FOOD PROTECTION MANAGER. NEXT INSPECTION
OBSERVED PACKAGED MEATS TO BE THAWED IN AN EMPTY SINK. PROVIDE FOR ALL POTENTIALLY HAZARDOUS FOODS TO BE PROPERLY THAWED IN ONE OF THE FOLLOWING WAYS: 1) IN A REFRIGERATOR UNIT IN A WAY THAT THE TEMPERATURE DOE NOT EXCEED 41°F 2) UNDER POTABLE RUNNING WATER AT A TEMPERATURE OF 70°F OR BELOW 3) IN A MICROWAVE OVEN ONLY WHEN IT IS A PART OF THE COOKING PROCESS 4) AS A PART OF THE CONVENTIONAL COOKING PROCESS. 750.240 IMMEDIATE/ONSITE
OBSERVED A CONTAINER OF BOILED EGGS IN THE WALK-IN COOLER TO BE UNCOVERED. IN ADDITION, I OBSERVED SEVERAL FOOD ITEMS BEING STORED ON THE FLOOR, INCLUDING: (1) 2 BAGS OF DRY PANCAKE MIX LOCATED WITHIN THE DRY STORAGE AREA AND (2) 2 BOXES OF LIQUID EGG IN THE WALK-IN COOLER. PROVIDE FOR ALL FOOD PRODUCTS IN STORAGE TO HAVE PROPER COVERS OR OVERHEAD PROTECTION AND FOR ALL FOOD PRODUCTS TO BE STORED AT LEAST SIX INCHES OFF OF THE FLOOR. 750.120/130 NEXT INSPECTION
